Mmmmmm sandwiches…
Spread the peanut butter on one slice of bread and the mashed banana on the other. Press the slices gently together. Melt the butter (or to be truly Elvis-like, melt bacon fat!), over low heat in a small frying pan. Place the sandwich in the pan and fry until golden brown on both sides. Eat it with a glass of buttermilk. (recipe from The Splendid Table)
On a personal Kat-note, when I was in college, best-college-boyfriend-ever Danny used to make these for me. Oh my gawwwwwwwd, they are good. The word is that Elvis ate up to 15 of these at a time!

One of the original 14 copies of the Bill of Rights is going to be on display at UNCA starting Thursday.
Cool!
Let’s see how many people ignore it or even have a clue it’s there or what’s important about it.
I bet we get 2% or less of the number of people who voted.
But - hey, it’s here and it’s history and it’s cool.
“The public is invited to see the Bill of Rights 5-7 p.m. Thursday, 3-7 p.m. Friday and 8 a.m.-noon and 1-4 p.m. Saturday at UNC Asheville’s Ramsey Library. Admission is free.
A special Liberty and Freedom Festival will be held 5-7 p.m. Friday. This 1700s period festival will lead up to a keynote talk by North Carolina Supreme Court Associate Justice Willis P. Whichard. The festival, on the UNCA Quad, will include period music, dramatic readings, craft demonstrations, reenactments and educational displays“
